This is one of my favorite Paleo granola recipes. It is very versatile and can easily be tinkered with to match your preference of flavor and texture.

  1. Preheat oven to 320 F
  2. Put nuts, sunflower seeds, and pumpkin seeds in blender or food processor, and pulse briefly, until the nuts and seedss are partially broken up into a variety of sizes (whole, halves, ground)
  3. Pour the nut seed mixture into a large bowl and stir in chia seeds, pumpkin spice, almond flour, coconut, and dates.
  4. Add pumpkin, ghee or coconut oil, honey, vanilla to the mixture. Mix well until liquid mixture is evenly distributed and coats all the dry.
  5. Spread granola out on a parchment lined baking sheet in an even layer. Bake for 10 minutes
  6. Stir granola and put back oven for another 10 minutes.
  7. When done, it should be golden brown. Turn the oven off, and let the granola sit in the oven for 20 minutes(or until it looks done).
  8. Remove the granola from the oven and let it cool—this will allow it to harden.
  9. Break up granola into chunks, and stir in dried fruit.

Recipe Notes

By putting in the dates before baking, the mixture sticks to them and forms a delicious granola clump, for lack of a better word. If you prefer to have granola pieces, then add more dates and/or syrup to the recipe, and don't mix it as thoroughly.
