ZEGO RECIPES: Oat Shortcake

My daughter Kelsey turned strawberry oatmeal into a cake that is satisfying enough to serve for dessert and clean enough to enjoy for breakfast! It’s simply too good to keep to ourselves, so here it is!



3 tablespoon melted ghee
1 cup Zego oat flour
2/3 c sugar
4 large eggs
1/4 tsp salt

Strawberry topping

2 cups strawberries
3 tbs sugar
2 tbs ghee
Pinch of salt


1/ Preheat oven to 350.
2/ Grease and line a pan with parchment paper.
3/ Whisk flour with 2 tbs sugar in a medium bowl.
4/ Combine remaining sugar, eggs, and salt in a bowl of a stand mixer and beat for 4 to 5 minutes, until the mixture is light colored, tripled in size, and should leave tracks when whisk is lifted.
5/ Sift in 1/3 of flour and fold it into the egg mixture. Fold in the remaining flour in two parts. Finally, fold melted ghee into the batter.
6/ Poor patter into the pan(s) you are using and bake until the cake is golden and a toothpick comes out clean.

Strawberry topping

While the cake bakes, combine strawberries, salt, ghee, and sugar in a medium sauce pan over medium high. Bring the mixture to a boil, decrease temperature to medium heat, and cover with a lid for 5 minutes. After five minutes, lift the lid, and continue cooking until the strawberries are broken down and the syrup coats the back of a spoon.

Before serving the cake, spoon the strawberry topping over the cake evenly. Serve with whipped cream or vanilla ice-cream if desired.
