Recipe from Stephanie Labile
1 cup of Dairy Free Butter (room temp)
1/2 cup of Maple Syrup ( or honey or agave)
1/2 cup of Date sugar (or maple or coconut sugar)
2 tsp of Vanilla
2 tbsp of Water
1 cup of Cassava flour
2 tbsp of Gelatin (or use an egg or egg replacer)
1 tsp of Baking Soda (make your own to make paleo)
1 cup of ZEGO Mix-Ins
In a medium bowl, mix together the butter, maple syrup, sugar, vanilla and water, let sit for 5 minutes.
In a separate bowl, mix in your flour, gelatin, baking soda and mix-ins.
Mix wet and dry ingredients together, don’t over mix.
Scoop onto pre-lined baking sheets (I use a 1.5 Tablespoon cookie scooper)
Bake for 10-13 minutes. Our come out perfect at 10 minutes.
Let them cool for about 5 minutes before moving carefully to a cooling rack and allowing them to cool. As the gelatin cools the harder the cookie gets so DON’T over bake them.
Cool completely before cutting.
