Why Limit Stuffing to the Holidays? Try Our Stuffing Pancakes and Waffles
When our intern Sarah Walcott said her family makes stuffing pancakes, I just had to try it.
Our healthy, delicious, and stuffing recipe makes amazing savory gluten-free pancakes and waffles that you can pop in the toaster oven and enjoy with any meal. It’s a fantastic sausage substitute (feel free to add more salt and some cayenne if you like spicy sausage).
We’re not kidding. With all the amazing veggies and herbs it easily adds 10 or more plants to your total for the day!
Savory Gluten Free Pancakes and Waffles: How This Is Better
This recipe is a great way to get the nutrition of over a dozen plants, courtesy of the veggies, oats, mixins, and herbs.
The Double Protein Oats and Mix-Ins adds 80g of protein and 48g of fiber to the full recipe, adding approximately 8g protein and 6g fiber in 2 pancakes on top of the fiber from all the veggies.
And, the seeds in the Mix-Ins add immune-boosting zinc, potassium, and other vitamins and minerals.
Did we mention they are delicious? They are utterly delicious and satisfying!
Savory Gluten Free Pancakes and Waffles: The Recipe
Makes Approx. 8 Serving (3/4 cup)
1 Tablespoons Olive Oil
2 cups ZEGO Vegan Stuffing
2-3 eggs or egg replacement
Optional: add in an extra pinch of salt and heat with some cayenne
Omnivore variation: Add bacon bits or chopped cooked sausage.
- Heat skillet with oil (do not let smoke)
- Beat eggs with any extra spice and salt.
- Stir eggs into stuffing.
- Cook on medium-low like pancakes (use approx. 1/3 cup per pancake or make silver dollar sized bites) or put batter into your waffle maker (amount will depend on size).
- Eat immediately with syrup for breakfast or in fried chicken and waffles or refrigerate or freeze and reheat in the air fryer, stovetop, oven, or toaster.
