Gluten-Free Blueberry Matcha Energy Bars: How this Recipe is Better
Store-bought granola bars are often delicious but, not that healthy for you. When you make your own with our superfood oatmeal blends you get simple ingredients that actually fuel your body. Plus, the flavor combination in these bars is next-level:
- Earthy and smooth matcha provides a natural energy boost. It contains caffeine and amino acids. Matcha is rich in antioxidants, particularly catechins, which may help prevent cell damage and reduce the risk of certain diseases.
- Vit. D2 from mushroom powder in our superfood blend supports your immune system and brain health with no mushroom taste. Adaptogens may support nerve & brain health and help to reduce stress.
- Dried Blueberries and dates also pack these vitamins and minerals as well as flavonoids, carotenoids and phenolic acid that help your body fight off viruses and support your immune system.
- Tiny, but mighty, chia seeds are powerful sources of omega-3 fatty acids, fiber, iron, calcium, and antioxidants.

Gluten-Free Blueberry Matcha Energy Bars: The Recipe
Ingredients
- 1 1/2 c ZEGO Blueberry Lemon Poppy Organic Oatmeal Superfood Blend
- 1/2 c tahini (or sunflower seed butter if allergic to sesame)
- 1/4 c maple syrup
- 1 tbsp coconut oil, melted
- 1-2 tbsp matcha powder
- 1/4 c unsweetened shredded coconut
- 2 tbs chia seeds
- Small handful mini white chocolate chips (optional)
- 1/2 tsp vanilla extract
- 1/4 tsp salt (don’t skip this, it brings out the flavor!)
Matcha Glaze
- 2 tbsp white chocolate chips
- 1 tbsp matcha powder
- 1 tsp coconut oil
Method
- Line an 8×8 pan with parchment paper.
- Whisk wet ingredients together in a medium size bowl.
- Now add your dry ingredients and stir until the mixture is well combined with no dry spots. (If your mixture is too dry, add a little more maple syrup.)
- Next, scoop the mixture into the pan lined with parchment and press down firmly with a spatula or another pan.
- Then set in the refrigerator for at least 1 hour. Note:The bars won’t hold together well if they haven’t been pressed or had enough time to set.
- Once the bars have set you can make the glaze by adding all ingredients to a small bowl and microwaving in 20 second increments, stirring frequently, until just melted.
- Pour the glaze over the granola bar mixture, cut into squares or bars and enjoy!
