Gluten-Free Cinnamon & Spice Peach Baked Oatmeal: The Recipe
Ingredients:
- 3 cups ZEGO Cinnamon & Spice Organic Oatmeal Superfood Blend
- 1/3 cup maple syrup or cane sugar
- 1 tsp baking powder
- Scant 1/2 tsp fine-grain sea salt
- 2 cups dairy-free milk
- 1 egg or flax egg
- 3 tbsp coconut oil
- 2 tsp vanilla extract
- 2 bananas, cut into 1/2″ slices
- 1 1/2 cups sliced or diced peaches
Optional Toppings:
- Brown Sugar
- Vanilla Bean Coconut Yogurt (or ice cream!)
To Make:
- Preheat oven to 375°F and grease an 8-inch square baking dish.
- In a bowl, mix the oatmeal blend, sugar (if using), baking powder, and salt.
- In another bowl, mash bananas and whisk together with the maple syrup (if using), milk, flax egg, oil, and vanilla.
- Add about half of the oat mixture to the bottom of the pan. Sprinkle 2/3 of the peaches on top. Cover the fruit with the rest of the oat mixture.
- Slowly drizzle the milk mixture over the oats. Gently tap the baking dish on the counter to ensure the milk moves through the oats. Scatter the remaining peaches on top.
- Bake for 35-45 minutes until the top is golden and the oat mixture has set.
- Sprinkle with brown sugar (optional) and let cool for a few minutes. Top with yogurt or ice cream if you like and enjoy!
