Decadence Filled Pop Tarts
In our family, pop tarts were reserved for camping trips. It was easy and the kids would love them. But, they were NOT intended to nourish us and NOT gluten free!
Due to the ingenuity of Kristen @cilantroandseafoam, we can enjoy pop tarts again! Her gluten free pop tarts are made with ZEGO’s Decandence Bar and Plant Protein is truly amazingly. The recipe is vegan and free from gluten, refined sugar, dyes and highly processed flour. Best of all, it has 2 grams of protein and 4 grams of fiber, making it a huge upgrade from the unhealthy version sold at the store.

Gluten Free Pop Tarts: How This Is Better
I have to admit when Kristen told me she wanted to make this recipe, I was skeptical. Gluten free pasty dough is a challenge. Would the ZEGO Decadence bar would hold up in the oven? Would it make the gooey, jammy center we all remember and love? Turns out, yes! And, the melty chocolate chips, SO decadent. These gluten free pop tarts will taste better than any you ever had as a child.
As an added bonus, the dough is not just vegan and gluten free but also refined flour and sugar free. Each pop tart even has 4g of fiber and 2 grams of protein. Those nutrients will help satisfy your hunger and balance out your sugar absorption. And, because all ZEGO products are purity verified for toxins, your immune system will thank you.
So, whether you’ve been gluten free for a very long time or just love good food, this recipe is a real treat.
Gluten Free Pop Tarts: The Recipe
Makes 6 Pop Tarts
Ingredients
+ Cassava Flour, 1 1/4 cup
+ Organic Coconut Sugar, 3 tbsp
+ Organic Plant Protein Powder, 1 tbsp
+ Organic Sea Salt, 1/2 tsp
+ Filtered Water, 1/2 cup
+ Organic Vanilla Extract, 1/2 tsp
+ Plant Based Butter, 1/2 cup
+ Organic Ground Flaxseed, 1/2 tsp
+ ZEGO Foods Berry Chocolate Decadence Bars, 6 bars
+ Vegan White Chocolate, 81g
+ Naturally Dyed Holiday Sprinkles, 1 tbsp
Method
+ Preheat oven to 425 degrees F.
+ Make a flax egg by mixing 1/2 tsp flax meal and 1 tsp water. Let sit for a few minutes.
+ Combine dry ingredients in a large mixing bowl, including the cassava flour, coconut sugar, plant protein, and sea salt. Whisk until well incorporated.
+ Add the water, vanilla, and flax egg to the mixing bowl, and use a spatula to combine all ingredients.
+ Melt butter for about 10 seconds in the microwave.
+ Add the butter to the bowl and combine ingredients with a spatula until you have a nice even dough mixture.
+ Line a cutting board with parchment paper, and coat the paper in a little bit of cassava flour to keep the dough from sticking.
+ Place the dough on the parchment paper.
+ Roll the dough out to flatten it. It should be about 1/8 inch thick.
+ Cut 12 2×3 inch rectangles of dough.
+ Sandwich a bar between 2 rectangles.
+ Use a fork to seal the edges of the layers of dough together.
+ Repeat this process for each pop tart.
+ Line a baking sheet with parchment paper and place the pop tarts on the sheet.
+ Put the pop tarts in the oven for 15 minutes or until the edges of the pop tarts are a light golden brown.
