Taco Tuesday High Protein, Gluten Free Tortillas
Serves 4 | Vegan Friendly, Gluten Free
INGREDIENTS
- 2+1/4 cup ZEGO Double Protein Oats ground in a food processor into flour
- 1 tsp salt
- 1 cup cold water
METHOD
Step 1: Mix salt and oat flour together until mixture is even.
Step 2: Slowly add in water until ball of dough forms. Form a ball of dough with your hands.
Step 3: Turn dough out onto a surface, lightly dusted with oat flour, and knead until dough is smooth.
Step 4: Divide into eight balls and let rest several minutes.
Step 5: Using rolling pan roll ball out until you have a thin, round tortilla.
Step 6: Heat a dry, non-stick or cast-iron pan over medium-high heat, cook tortillas, one at a time, for 30-60 seconds.
Step 7: Add protein source and toppings of choice! We kept it simple with fresh garden salsa and lettuce!
The sports nutritionists @fwdfuel are always looking for ways to add protein to their athlete’s diets. This recipe they made for gluten free tortillas is also corn free and much higher in protein and fiber than traditional wheat and corn versions.
If you want your tortillas to be a little softer, substitute tapioca flour for 1/4 of the oat flour and add 1t of xanthum gum.
