We love tacos! Everyone does, right?! This simple food is such a fun and interactive meal to share with family and friends. And, they give everyone the opportunity to load their shells with their own choice of ingredients from a delicious spread. Better yet, this flavorful plant-based taco filling recipe offers a satisfying meatless option that is still protein-rich.

Double Protein Vegan Tacos: How this Recipe is Better

Double Protein Vegan Tacos: The Recipe
1 ½ Cups ZEGO Double Protein Oats
1/3 Cup Sunflower Seeds
1 Cup White Mushrooms, chopped
2 Cups Vegetable Stock
½ Yellow Onion, chopped
1 Tablespoon Chili Powder
1 Teaspoon Cumin
1 Teaspoon Garlic Powder
1 Teaspoon Paprika
1 ½ Teaspoons Salt
½ Teaspoon Arrowroot or Corn Starch
1. Add all ingredients except oats to a large saucepan and bring to a boil.
2. Stir in oats.
3. Reduce the heat to low and allow to simmer for 10 minutes.
2. Fill your tortillas with the taco “meat” before adding your favorites like cilantro, salsa, avocado, cheese, and a squeeze of fresh lime juice!
