Gluten-Free Carrot Cake Overnight Oats: The Recipe
Ingredients
- 1/3 cup ZEGO Cinnamon Spice Organic Oatmeal Superfood Blend
- 1 tbsp golden raisins
- 1 tbsp raisins
- 1 tbsp shredded unsweetened coconut
- 3 tbsp finely shredded carrots
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup
- 1/3 cup coconut milk (or substitute oat milk if allergic to coconut)
Toppings
- Shredded Coconut
- Raisins
- Yogurt (we liked vanilla bean coconut yogurt for a dairy-free option!)
- Walnuts (great for extra crunch if no allergy concern)
To Make
- In a small jar or lidded container, combine the coconut milk, vanilla extract, and maple syrup.
- Stir in the shredded carrots, raisins, and shredded coconut.

- Then cover and refrigerate overnight, or for at least 2 hours, until the liquid is absorbed.
