Savory Gluten-Free Waffles with Greens
Welcome to our 3rd recipe in our Savory Gluten-Free Waffle series! We are so in LOVE with savory waffles and elegant dinners, easy lunches, and quick breakfasts that we made this recipe series!
You can make these with your fave leftovers as we did with our Mexican waffles. Or, you can use pesto or spinach to make them green, like the ones in this recipe!
With just half a cup of leftovers, pureed greens, or pesto, you can make an amazing meal or snack. And, you’ll be very satisfied because of the heartiness of oatmeal made from our Double Protein Oats.
You can be creative and play with the ingredient ratios. Use our savory waffle recipes as a guide. Any way you combine it, these gluten-free waffles are a great way to make satisfying plant-based meals. But we want to warn you, hide from the rest of the fam when you make these if you don’t want to share because they ROCK!

Savory Mexican Gluten-Free Waffles
½-1 cup cooked ZEGO Double Protein Oats
½ cup pureed greens – we used leftover sauteed spinach but you could use spinach dip or fresh.
+1/4 cup pesto
Pinch of sea salt if needed
Stir all the ingredients together.
We highly recommend you use a mini-waffle maker. They cost under $30 and fit easily in a crowded cabinet. Mini waffle makers cook VERY evenly and quickly. And, of course, they are super fun!
Top with sour cream, hot sauce or nothing at all. ENJOY!
