- ¼ cup maple syrup
- ¼ cup ground flaxseed
- ½ tsp sea salt
- ½ cup pumpkin purée
- 1-2 tsp cinnamon
- 1 tsp ground ginger

- Optional: a handful of dark chocolate morsels
Method
- Preheat oven to 350°F, line a baking sheet with parchment.
- Combine pumpkin purée, maple syrup, salt, cinnamon, ground ginger, and vanilla in a bowl.
- Add in flaxseed, muesli, and optional chocolate morsels. Stir until fully mixed.
- Drop ¼ cup scoops onto the baking sheet and flatten slightly.
- Bake for 18-22 minutes until edges are golden.
