Ingredients

  • ½ tsp vanilla
  • ¼ cup maple syrup
  • ¼ cup ground flaxseed
  • ½ tsp sea salt
  • ½ cup pumpkin purée
  • 1-2 tsp cinnamon
  • 1 tsp ground ginger
  • 2½ cups ZEGO Organic Apple Cranberry Muesli
  • Optional: a handful of dark chocolate morsels

Method

  1. Preheat oven to 350°F, line a baking sheet with parchment.
  2. Combine pumpkin purée, maple syrup, salt, cinnamon, ground ginger, and vanilla in a bowl.
  3. Add in flaxseed, muesli, and optional chocolate morsels. Stir until fully mixed.
  4. Drop ¼ cup scoops onto the baking sheet and flatten slightly.
  5. Bake for 18-22 minutes until edges are golden.
  6. Let cool and enjoy!
