Gluten-Free Blackberry Crumble Protein Bars: The Recipe

Ingredients:

To Make:

  1. Preheat oven to 350°F (180°C)
  2. Line an 8 x 8 baking pan with parchment paper.
  3. Add 1 1/2 C of ZEGO Double Protein Oatmeal to a blender or food processor. Blend on high for about 90 seconds or until oats have been ground into a fine flour.
  4. In a large mixing bowl, add your oat flour, protein powder, cinnamon and spice superfood oatmeal blend, 1/3 C. maple syrup, salt, coconut oil, and vanilla. Mix until just combined and there are no dry spots.
  5. Using a spatula, press the dough into your pan, reserving about 1/3 of the mixture for the crumble topping.
  6. Next, add 3 Tbsp. of maple syrup, lemon juice, rice flour, and fresh blackberries to a small saucepan. Cook on medium heat for 3-4 minutes, until the mixture is bubbly and has thickened. Mash lightly with a spatula or fork.
  7. Pour the blackberry mixture over your crust.
  8. Next, crumble the rest of your crust mixture on top the blackberries. Sprinkle with coconut sugar.
  9. Bake for 30-35 minutes, until the top of your bars are bubbling and golden.
  10. Let the bars cool and place in the fridge to set completely before cutting.
  11. Enjoy!
