- Makes 2 servings.
INGREDIENTS
- 2/3 cup ZEGO Double Protein Oats
- 1 1/3 cup water
- 1 cup coconut milk (full fat)
- 1/3 cup pumpkin purée
- 1 thumb fresh ginger, grated
- 1/2 tsp turmeric
- 1 tsp pumpkin spice (if you don’t have a pumpkin spice mix you can add cinnamon, nutmeg, cardamom, lemon peel, and cloves)
- salt and pepper
TOPPINGS
- maple syrup or date syrup, optional to taste
- pepitas or pecans
- a dash of pumpkin spice or cinnamon
- fresh grated ginger
DIRECTIONS
- First, bring water and salt to a boil in a small pot
- Then add oats and simmer for about 10 minutes, stirring often
- Next, stir in coconut milk, pumpkin purée, a dash of black pepper and the other spices, and simmer for 10+ minutes, stirring often
- Then turn off the heat, stir in fresh ginger; let rest for 2-3 minutes
- Divide the oats between two bowls and (optional) stir in a drizzle of maple syrup or date syrup (to taste if additional sweetness is desired)
- Top with pepitas and a dash of pumpkin spice
- Enjoy!
Tip: If you have coconut allergies, feel free to substitute with another type of milk; just keep in mind that the texture and creaminess may vary depending on your choice.
