Birthday Cake Gluten-Free Baked Oatmeal

And, if you’re looking to make this a bit healthier, we suggest changing the icing to coconut whipped cream. That will give you more staying power and balance the carbs nicely. And, you can easily omit the maple syrup and toss in a couple of dates instead!

How This Birthday Cake Gluten-Free Baked Oatmeal Recipe is Better
- By using our Double Protein Oats as the base of this recipe, you get about 10g of protein and 7g of fiber per serving and more iron than typical oats.
- Poppyseeds not only add crunch but also has an ample amount of the amino acid lysine to complete the protein in the oats. That means you get maximum digestibility and nutrition.
- We also love poppy seeds because they have loads of trace minerals and fiber.
- You can substitute dates for the maple sugar and unsweetened coconut whipped cream for the icing to remove the added sugar.
- The banana adds potassium and other phytonutrients and fiber to support your immune system.
Birthday Cake Gluten-Free Baked Oatmeal
- Makes 2-3 servings.
INGREDIENTS
+ 1 cup ZEGO Double Protein Oats
+ 1 tsp baking powder
+ 1 pinch sea salt
+ 3/4 cup milk
+ 1 egg
+ 1 tbsp maple syrup (or 3-4 dates)
+ 1 tsp vanilla extract
+ 1/4 tsp almond extract
+ 1 banana
+ 2 tsp poppy seeds
+ 1/4 cup sprinkles
TOPPING
+ 1/2 cup butter, softened (or solid coconut cream)
+ 1 1/4 cup powdered sugar
+ 1/2 tsp vanilla extract
+ 2 tbsp sprinkles
DIRECTIONS
1. Preheat oven to 375F.
2. Add oats, baking powder, sea salt, milk, egg, maple syrup, vanilla extract, almond extract, and banana to the blender.
3. Blend for 1 minute.
4. Pour into a bowl and mix in sprinkles until evenly distributed throughout.
5. Pour into two 6in round baking pans or one 4x6in rectangular baking pan.
6. Bake for 30 minutes.
7. Put topping ingredients in a cold metal bowl, omitting the sprinkles. Use a hand or standing mixer to make whipped cream (coconut cream version) or icing (butter version). Mix in sprinkles and dollop on top!
7. Take pics, post, and enjoy.
