How This Gluten-Free Blueberry Lemon Scones Recipe is Better

Gluten-Free Blueberry Lemon Scones
Vegan, GF, Refined Sugar-Free, Egg-Free, Dairy-Free,
- Makes 8 servings.
INGREDIENTS
- 1 bag of ZEGO blueberry lemon poppy oatmeal blended into flour
- 1/3 cup coconut sugar
- 1/3 cup solid coconut oil
- 1/2 cup coconut milk
- 1 tbsp fresh lemon juice
- 1 tsp lemon extract (optional)
- 1/4 tsp lemon zest
- 1/4 tsp sea salt
- 1/2 cup fresh or frozen blueberries
FOR THE GLAZE:
- 1 tbsp cashew butter (tahini would work as well)
- 1 tbsp pure maple syrup
- 1 tbsp fresh lemon juice
DIRECTIONS
Pre-heat the oven to 400 degrees and line a baking sheet with parchment paper.
- Using a high speed blender, add one bag of blueberry lemon poppy oatmeal and blend on high into a fine flour.
- In a large bowl, add in the oat flour, coconut sugar, salt, and lemon zest. Combine well.
- Next, add in the coconut oil and mix into the flour mixture until there are just small bits of solid coconut oil left.
- Then add in the coconut milk, lemon juice, and lemon extract. Mix well until everything comes together.
- Fold in the blueberries and then form the scone mixture into a round shape about an inch and a half thick.
- Place on parchment paper and cut into 8 equal sections.
- Place the 8 scones onto a parchment lined baking sheet with about 2 inches of space in between each one.
- Bake at 400 for about 20-22 minutes. Keep an eye on the scones to make sure they do not get too dark.
- While the scones are baking, make a quick glaze by combining cashew butter or tahini, maple syrup, and lemon juice in a small bowl.
- Once the scones are done, let them cool for a few minutes and then drizzle the glaze on top of each one. Top with more lemon zest if desired.
- Let the scones cool completely and then enjoy! Keep stored in an air tight container.

No Sugar Added Pumpkin Banana Baked Oatmeal
Pumpkin season is here, and while most fall treats are loaded with sugar, this cozy plant-based breakfast from @melissas_healthykitchen brings all the flavor without the added sugar. 🍌
She uses ripe bananas for natural sweetness—plus our ZEGO Double Protein Oats for extra protein, fiber, and peace of mind knowing they’re Purity Verified and tested for heavy metals, glyphosate, and 500+ toxins. 🌿
Here’s how to make it:
Ingredients
2 cups ZEGO gluten-free oats
1 cup pumpkin purée
1 ripe banana
2 Tbsp melted coconut oil (or other oil)
1 1/2 cups coconut milk (or any dairy-free milk)
1 tsp baking powder
1/2 tsp cinnamon
1 Tbsp pumpkin spice seasoning
1/4 tsp salt
3 Tbsp flaxseed meal
3 Tbsp hemp seeds
2 tsp vanilla extract
1/2 cup chopped pecans (or pumpkin seeds for a nut-free option)
To Make
Mix the wet ingredients.
Add the dry ingredients and stir until combined.
Fold in nuts or seeds.
Add to 4 greased ramekins or an 8×8 baking dish.
Bake at 350°F for 30–35 minutes.
Let cool for 10 minutes.
Top with dairy-free vanilla yogurt and a sprinkle of cinnamon.
Store covered in the fridge and enjoy all week!

🌾 Celebrating Indigenous Food Traditions: Wild Buckwheat 🌾
Indigenous Peoples’ Day may have passed, but we’re continuing to celebrate all month long by honoring culturally significant foods — like wild buckwheat.
Unlike the cultivated buckwheat used in cereals and flours (Fagopyrum esculentum), wild buckwheat (Eriogonum species) is native to North America and has long held importance for many Indigenous communities.
While not all species produce edible grain, parts of the plant — such as the young stems, leaves, and flowers — have been used for food, medicine, and ceremony. Tribes including the Karuk, Miwok, and Kumeyaay are among those who’ve incorporated wild buckwheat into their traditional practices, valuing it for its healing properties and connection to the land.
Each species tells a story of resilience, nourishment, and deep relationship with nature — a reminder that food is more than sustenance; it’s heritage.
