Apple Cranberry Crumble Protein Bars
- Makes 9 servings
INGREDIENTS
- 1 ½ cups apple cranberry muesli blended into a fine flour
- ⅓ cup ZEGO protein powder
- ½ cup unsweetened apple sauce
- ¼ cup tahini (can sub sunflower seed butter)
- ¼ cup pure maple syrup
- ¼ cup water
- Pinch of salt
CRUMBLE TOPPING
- ⅓ cup muesli + ⅓ cup blended muesli (flour)
- 1 tbsp ZEGO protein powder
- 2 tbsp pure maple syrup
DIRECTIONS
- Preheat the oven to 350 degrees and line a loaf pan with some parchment paper
- Add 1 ½ cups of muesli in a high-speed blender and blend into fine flour
- In a large bowl, add the apple sauce, maple syrup, tahini, water, and pinch of salt.
- Combine well until smooth.
- Add in the muesli flour and protein powder. Mix well until a smooth batter forms. Pour the batter into the parchment-lined loaf pan
- In a small bowl, make the crumble by adding ⅓ cup of whole muesli and ⅓ cup of muesli flour, protein powder, and maple syrup. Mix everything together well and then spread the crumble over the top of the muesli bars.
- Bake at 350 for 20 minutes and then cover the top with parchment paper and bake for another 10 minutes.
- Let cool completely, cut into bars, and enjoy!
