Take our gluten-free breakfast muesli on-the-go with these delicious Cinnamon Muesli Bars created by one of favorite plant-based influencers, Amanda @plant__creations.

Amanda created these perfectly packable bars with our Organic Cinnamon Twist Muesli and only one tablespoon of added sweetener, making these bars a worthy snack or breakfast choice!

PRO TIP: If you want more protein per bar, add 1 tablespoon of our Pure Plant Protein powder made from 100% sacha inchi seeds.

How This Gluten-Free Cinnamon Muesli Breakfast Bar Recipe is Better

  • Fruit sweetened with only 1 added Tbsp of date syrup.
  • Added iron and fiber from the seeds in the muesli.
  • Cinnamon helps keep your blood sugars steady.

Gluten-Free Cinnamon Muesli Breakfast Bars

  • Makes 9 servings.

INGREDIENTS

  • 1 cup ZEGO Cinnamon Twist Muesli (blended into flour)
  • 1/2 cup muesli (not blended
  • 1 overripe banana (mashed)
  • 1/3 cup unsweetened applesauce
  • 1 tbsp date syrup
  • 1 pinch salt
  • 1/4 cup creamy almond butter or your favorite seed butter
  • 1/4 tsp cinnamon
  • 1/4 tsp baking powder

DIRECTIONS

Preheat the oven to 350F and line an 8×8 or 9×9 baking dish with parchment paper.

  • In a high-speed blender, add in one cup of muesli and blend into a fine flour. 
  • In a large bowl mash up the banana and then add in the applesauce, date syrup, and almond butter. Combine well.
  • Add the muesli flour, 1/2 cup non-blended muesli, pinch of salt, cinnamon, and baking powder. Combine with the wet ingredients into a smooth batter.
  • Pour into the baking dish and spread out evenly.
  • Bake for 16-18 minutes.
  • Let cool and cut into squares.
  • Top with more almond butter and enjoy!
